Normally you would ask the fish monger to prepare the fish for you, but it is a good skill to have. So here it is; step by step directions on how to fillet a round fish.
1. Lay the fish on the chopping board, holding it down with your left hand.
2.Starting from the head, cut down through the flesh, towards the tail.
3.Insert a sharp knife between the flesh and the bones and slice the fillet away from the bones, keeping the blade as near the bone as possible.
4.Cut the fillet away just under the gill.
5.Cut through the belly skin to detach the fillet completely.
